Molasses-and-Buttermilk gingerbread squares (from Bon Appetit)
Diane advises doubling the spices. Preheat oven to 325 degrees. Spray 8" x 8" x 2" metal baking pan with cooking spray. Sift in a medium bowl:1 1/4 c all-purpose flour
2 teaspoons cinnamon
1 teaspoon ground ginger
1/2 teaspoon baking soda
1/8 teaspoon ground nutmeg
Combine large bowl:
1/2 c light molasses
1/2 c sugar
1/2 c unsalted butter, melted
1/2 c buttermilk
1 large egg
Whisk to blend. Whisk in dry ingredients. Pour batter into pan. Bake cake until tester inserted into center comes out clean, about 25 minutes. Cool cake completely in pan on rack. Sift powdered sugar over cake. Cut into 16 squares.
