Dad's Bolognese

Brown but do not crisp:

1 lb. ground pork/beef/veal mix
1 lb ground beef

Chop finely:

4 oz celery (~113 grams)
8 oz carrots (~226 grams)
1 ½ lb onions (~680 grams)
4 cloves garlic

Saute until transparent. Add:

1 c white wine

Add meat mixture and then add:

6 oz tomato paste
13 ¾ oz beef broth
28 oz. ground peeled tomatoes

Bring to a boil and then lower heat. Add:

2 bay leaves
1+ t thyme
2 t basil
½ t salt
generous grind of pepper

Cover nearly completely and simmer at least an hour.
