Nonna's Torta



Make one batch of:

Nonna's pasta

Making sure to get the paper thinnest strips possible. You want to be able to read the newspaper through this pasta. Set them aside. Preheat the oven to 350. For the filling, cook:

Several pounds of spinach

Drain and then squeeze as much water out of the leaves as possible. Mix in:

1 c grated parmesan

Taste and add:

more parmesan

Don't stint on the cheese. You probably still don't have enough cheese. Add:

more parmesan

you may have enough now. Add:

¼ c olive oil

Add:

Salt and pepper

To taste. Coat a baking pan with:

olive oil

Lay strips of pasta across pan, pressing into the corners. Before add spinach mixture on top taste again to be sure you have enough parmesan (you cannot have too much) and then fold strips over the spinach. Lay additional strips on the top until there is a complete cover. Coat the top with

Olive oil

And pierce with a knife or fork in several places. Bake at 350 until the top is golden.
