Shepherd's Pie (Adapted from "Favourite Recipes" by Weight Watchers)
Serves 4, each serving has 6 ½ pointsNote: recipe is in metric
Preheat oven to 180 degrees centigrade. Boil until tender:
3 potatoes
Meanwhile, coat a large pan with cooking spray and heat. Cook until soft:
1 onion, chopped
1 carrot, chopped
1 tsp. minced garlic
Add and cooked until no longer pink:
500 g minced beef (approx. 1 lb. hamburger)
Then add and stir through:
1 tsp. flour
Cook for a minute to remove "flour-y" flavor. Stir in:
4 tomatoes, chopped
1/3 c beef stock
2 tbs. chopped, fresh parsley
Cook for about 20 minutes. Season with:
salt and pepper
Mash potatoes and mix with:
20g butter
¼ c. skim milk
salt and pepper to taste
Spoon meat mixture into a casserole dish. Spread mashed potatoes on top. Bake for 30 minutes or until golden on top.
Laura's notes: you can omit flour as thickener if you reduce meat mixture by simmering. Color will be better. For more flavor you can add:
mustard
tomato paste
Add these to taste during the simmer stage.
