Pico de Gallo Salsa
A fresh and chunky salsa with tomatoes and chili peppers and onions, also known as Pico de Gallo.Pico de Gallo, version 1
4 plum tomatoes, seeded and chopped1/2 cup finely chopped onion
2 fresh chili peppers, mild or hot, seeded and finely chopped
2 tablespoons chopped red or yellow bell pepper
1 1/2 teaspoons finely chopped fresh cilantro
1 teaspoon lime juice
salt and pepper, to taste
Combine ingredients in a glass or other non-reactive bowl and refrigerate for at least 30 minutes before serving. Makes about 2 cups.
Pico de Gallo, version 2
6 medium Tomatoes diced1 medium Onion diced
1/4 cup fresh Cilantro chopped.
2 to 4 Fresh serrano or jalapeņo seeded and minced
garlic powder just a pinch
Salt to taste
Put all ingredients in a bowl add 1/2 cup of cold water, mix well. Let set a few minutes.
